Can someone please make a recommendation for a Mac Pro system that isn't overly expensive?

What components are must haves and which ones are worth expanding upon later?

How important is the 6-core vs.the quad core? Will a quad core suffice for editing long form indie films?

What brand monitor would you also suggest using?

It is impossible to make a recommendation in general. Too many unknowns.
Also, for me it is hard to think about buying a machine that has not been updated in almost three years now.

Buy a Mac Pro 4,1 with a single quad core 2,26 Ghz
Upgrade it to 5,1 (firmware update)
Buy a W3690 Xeon (6 x 3,46 Ghz) and a lot of RAM
Install Sierra
Buy one or 2 AMD RX 470

Then you have probably the best Mac Pro for FCPX ;)

You don't say what your budget is.
If buying new, then I would seriously investigate an iMac 27" 5K. This also takes care of monitor. Very nice, very capable.
If considering a new MacPro, I would wait if you can or find one used.
There are lots of older used mac models that will work great. You don't say what type of camera(s)/format/resolution you will be working in, so how to configure your system really depends on that.

Just wait. Do not buy a new Mac Pro now, wait for the Appel Mac Event in October, probably will be some new mac announcements and hopefully a new "New Mac Pro" with Brodwell CPUs.
